Eddie Chong moderated “The Current State of Global Stablecoin Rails: Payments, Settlement and Compliance” at Proof of Talk Paris 2026. The archived programme billed Chong as Founder of SFI and placed the discussion on the Taostats Stage at the Louvre Palace on 3 June, from 14:40 to 15:10. Christian Niedermüller, Josiah Senu and Suzanne Morsfield were the listed panellists.
Chong’s company work centres on the connection between stablecoin payments, tokenised assets and AI applications. In an article dated 14 May 2026, SFI identified him as chairman of its ecosystem foundation and described him as a co-founder. The article presented the organisation as a platform connecting payment gateways, consumer uses and trading tools through investment, incubation and partnerships. Its stated aim was to make stablecoins part of the infrastructure through which those activities connect.
SFI’s company website identifies Chong as Executive Chairman. The organisation describes its investment focus as stablecoin payment infrastructure, AI and AI agents, and businesses associated with real-world assets. Its published portfolio includes SoluluPay in payments, COPX in trading, FinChip.ai in AI and Caviar in retail. These are the company’s descriptions of its areas of work and portfolio, rather than evidence of particular adoption levels or financial performance.
Chong was also listed in the speaker programme for the Crypto Valley Conference in Rotkreuz, Switzerland, on 28 May 2026. That organiser billed him as Chairman and CEO of SFI Group. At the Paris summit the following week, his recorded role was moderator: bringing together the panel’s payment, stablecoin and accounting perspectives within the programme’s discussion of global settlement rails.
